December 2025
The outpouring of love we have received over the past month has been overwhelming. It has been so much fun seeing so many of your faces, embraced by your warm affection. Your cards and letters and messages are all read with a smile and not just a few tears. It truly has been a special time. I feel a connection to everyone that reminds me of the first opening months, full of energy and adrenaline and camaraderie that we were doing something together that was bigger than we were.
And we will continue to nurture, nourish, entertain and celebrate until the end.
Employee Spotight: Tom Huber, Pastry Chef
There is no better time of year to put the employee spotlight on our incredible pastry chef, Tom Huber. Tom keeps a low profile but you know his desserts well.
Tom grew up in CT and early on was introduced to food and cooking through his mother and his aunt who had a catering company. Tom attended the NY Restaurant School. His first job after graduation in 1987 was at Restaurant du Village owned and operated by Alsatian chef Michel Keller. Tom worked prep and then the line before he drifted to the pasty department. There he had the occasion to meet Jaques Pepin and Julia Child.
Tom met his wife Jennifer at a wedding and they married in 1994. They moved to Nashville in 1998 when Tom began working at Provence. He was still working at Provence when he was hired on as the pastry chef at Marche in 2006. He and Jennifer have two children, Sammy and Alex. When Marche closed Tom moved pastry headquarters to Margot.
Tom's pastries are classic and his talents know no bounds- he recently fashioned a cake to resemble an Hermes Birkin Bag for a private dinner. Tom also makes favorites like apple crisp and bread pudding and chocolate chip cookies. But everything he makes is artful and delicious. Taste for yourself!
From the Bar
Bar manager, Jayda Hampton, has crafted an exciting and delicious list of holiday cocktails and you will want to try them all. Choose from:
Naughty or Nice
Santa's Sleigh
Rudolph's Red Nose
Perdiz in a Peartree
Pom Pom L'orange
and don't forget champagne punch, eggnog, mulled wine, hot chocolate and coquito. We want highlight one drink in particular: O"Tannenbaum: Citadelle Rouge gin, Genepy, lime, rosemary juniper syrup, a whisper of green chartreuse and a splash of Courtage. This will surely have you swooning under the tree.
